- pinch of salt

2. Place the amaranth in a pan with the water and salt, and bring to the boil.
3. Reduce the heat to medium-low and cook the amaranth for about 20-25 minutes, until the water is absorbed.
4. Turn off the heat and let the amaranth rest for 5 minutes.
5. Add fresh or dried fruit to taste and serve.
This recipe can be customized to your taste by adding milk or maple syrup to sweeten.
Amaranth can also be used as a substitute for rice or quinoa in many other recipes.
