Wild garlic owes its name to the fact that bears, upon awakening from their spring hibernation, ate abundantly of this plant to purify themselves and regain their strength. Already known to the Celts and Germanic peoples as a sacred purifying plant, it was used in the Middle Ages both as a medicinal remedy and as a food. In Sicily, the tradition of gathering wild herbs is deeply rooted in rural culture: wild garlic was harvested in the beech and chestnut forests of Etna, the Nebrodi, and the Madonie mountains, where it still grows luxuriantly in the spring months. Its appearance heralded the arrival of spring and the beginning of the season of edible wild herbs. Today, this plant is experiencing a revival thanks to the growing interest in foraging cuisine and the valorization of local biodiversity.
Wild garlic is considered one of the most beneficial wild plants for human health. Rich in sulfur compounds such as allicin, it possesses powerful antibacterial, antiviral, and antifungal properties, making it a natural ally for the immune system. It has strong purifying and detoxifying properties, promoting the elimination of toxins accumulated during the winter and supporting liver function. It contributes to cardiovascular health thanks to its ability to reduce LDL cholesterol and thin the blood, preventing clot formation.
