Seven months of patience on the skins: Cantina Giara's most extreme and structured orange wine.

The “7 Mesi” Puglia Bianco PGI is an organic orange wine with an extreme character, owing its name to the extraordinary length of maceration: a full seven to eight months of contact with its skins, an extremely long period that makes it one of Cantina Giara's most structured and profound wines. Made from a blend of Fiano, Malvasia, and Greco grapes grown in the Lama Baronale area of Adelfia, it undergoes three-stage aging in stainless steel and amphorae. Unfiltered and unclarified, it displays an intense amber-copper color. The grapes come from a thirty-five-year-old espalier vineyard on calcareous-clay soil, at an altitude of 231 meters. VinNatur-certified and organic, it is a white wine of rare complexity and personality, defying all convention.
While maceration on the skins is the oldest winemaking technique, extending it to seven to eight months means delving into the very heart of the orange wine tradition, where the great macerated wines of the Caucasus and the Mediterranean once thrived. This lengthy contact radically transforms the white wine, giving it a structure, tannic texture, and complexity that bring it closer to a red wine in character while retaining the soul of the white varietals. The blend brings together three great native Southern Italian grapes—the elegant Fiano, the aromatic Malvasia, and the mineral Greco—in a dialogue of rare richness. Aging in three phases, between stainless steel and terracotta amphorae, completes this masterpiece of patience. Cantina Giara thus creates a unique wine from ancient grapes.
A wine produced through spontaneous fermentation using indigenous yeasts, with maximum maceration, unfiltered, and organic and biodynamic farming, represents a conscious choice for a more natural and authentic drinking experience. The seven- to eight-month maceration on the skins preserves and extracts the grape's richness, giving this white wine an exceptionally high concentration of polyphenols and antioxidants, evidenced by its tannic structure. Biodynamic cultivation on calcareous-clay soil, without synthetic products and with low yields, guarantees a lively and authentic product. Any residues are natural and testify to the wine's authenticity. Consumed in moderation, it showcases native grape varieties and one of the world's oldest and most fascinating winemaking techniques.

HARVEST: Manual, in 10 kg crates, between late September and late October
VINIFICATION: Destemming and spontaneous fermentation with only indigenous yeasts in stainless steel; natural maceration on the skins for 7-8 months at an uncontrolled temperature, with manual pumping over. No fining or filtration.
AGING: 2 months in steel, 4 months in amphora; after 6-7 months it is racked off and put back in steel for 1 month until bottling.

It has an intense, deep, and luminous amber-copper color, with the natural haze typical of unfiltered and unclarified wines and very long maceration. Any sediment on the bottom is entirely natural.
On the nose, herbaceous and exotic fruit aromas open up in a voluminous and complex bouquet, the result of the maxi-maceration that amplifies the aromatic richness of the three grape varieties.
On the palate, it is full-bodied and structured, with good acidity that supports its balance and a tannic texture that gives it an almost "red" character. The aftertaste is very fruity, with a long, powerful, and persistent finish.
An intense and well-structured orange wine, it pairs perfectly with white meats and roasts, truffle cheeses and mushroom dishes, and rich cured meats. Its tannic structure allows it to withstand the challenging pairings typical of red wines, and it's also excellent as a meditation wine, best served at 8°C.
Cantina Giara is a small, family-run winery in Adelfia, Puglia, led by winemaker Giorgio Nicassio. They practice exclusively biodynamic viticulture, using natural, spontaneous fermentation vinification without fining or filtration, and define themselves as "artisans of wine."
