RECIPE PREPARATION

 
  1. Start with the preparation of the garlic sauce.
  2. Peel the garlic cloves, cut them in half and crush them finely.
  3. In a pan, pour the extra virgin olive oil, add the chopped garlic and blend with a little water.
  4. Cover the pan with a lid and cook over medium heat for about 15 minutes.
  5. Once the garlic is softened, use a fork to mash the larger pieces well, until they are finely chopped.
  6. Important: do not fry the garlic, it must be cooked gently and slowly.
  7. At this point, add the chopped tomatoes, parsley, spices to taste and salt.
  8. Cover the pan again and simmer the sauce, for about 15-20 minutes, until it has reached the desired consistency.
  9. Meanwhile, cook the pici in plenty of salted water. Drain them al dente and stir-fry over high heat for a few minutes before serving.
