oysters online, We know better.

The oyster is a bivalve mollusk.

It filters the water of the sea holding back vegetable plankton.

It has two unequal valves, the lower one is larger and hollow than the upper one. The valves are held together by a sort of hinge.

They live in all seas and also in the Mediterranean, but the the best are those of the eastern Atlantic and more precisely of north-western France, Marennes d'Oleron, Brittany, Finistere and Normandy.

The different varieties of oysters, the ideal of the oyster

There are several varieties, but on our markets there are mainly two: the flat ones (ostrea odulis), in France called "Plate" and the concave (crossostrea gigas), in French "Dig".

From a gastronomic point of view, the dishes have a more delicate taste and are more sought after, at least in France, and their price is generally higher than the concave ones.

Le FLAT OYSTERS   they measure 8-10 cm in diameter, the largest 15 cm and have a weight of 60-90 g.

There are two varieties: the "belons" white meat and le "Marennes" slightly green flesh.

Le CONCAVE OYSTERS (CREUSE) they measure 6-15 cm, their measure is indicated in numbers from the smallest to the largest: 1, 2, 3, 4, 5.

The bigger it is, the more expensive it is, but not necessarily good. We recommend size 3 or 4.

The largest oyster in the world

The largest oyster in the world was caught on 24 October 2020 in Carantec right from our manufacturer Alain Morvan, it measured 22 cm in length and 16 cm in width and weighed 2,2 kg.

It is an incredible discovery made by the son of Alain Morvan, an oyster farmer in Carantec, during the last great tide.

He sees an oyster tip sticking out of the mud, which makes him very curious. When he takes it out, he finds that it is very heavy.

After the weigh-in, the father and son are in shock: the oyster weighs 2,2 kilos. Its measurements are exceptional: 22 centimeters in length, 14 in width and 11 in thickness.

The mollusk is over 20 years old.

The production area of these oysters is considered the best in the world for its breeding, thanks to the perfect environment in which they live.

Entered in the Guiness World Record
The biggest oyster in the world!

For the record, it was put back into the sea and is still alive
